Recipe: Loaded Asian Tater Tots
4 cups frozen tater tots
The Sauce
1 teaspoon red chili flakes
2 teaspoons black sesame seeds
1/4 cup sugar
1/4 cup fish sauce
1/3 cup Thai sweet chili sauce
2 tablespoons fresh lime juice
12 slices of fresh ginger
2 tablespoons chopped peanuts
2 green onions, thinly sliced
2 tablespoons chopped fresh mint leaves
2 tablespoons mint minced
1 jalapeno, thinly sliced
Garnish
¼ cup chopped peanuts
A small handful of mint leaves
¼ cup thinly sliced green onions
Place tater tots on a large baking sheet and bake according to package directions (I like to keep them in a little extra long to make sure they are very crispy before tossing in sauce).
While tater tots are baking, prepare the sauce:
Place the chile flakes and sesame seeds in a sauté pan over medium heat. Allow to toast for a minute, then add all of the remaining sauce ingredients. Stir to combine and dissolve the sugar. Cook the sauce until thickened and glazy, about 3 minutes.
Once tater tots are done baking, remove from oven. Spoon sauce over tots & toss well to coat. Pour out onto a plate and garnish with crushed peanuts, mint and green onions.
