Green Bean Salad with Toasted Walnuts and Blue Cheese

For Salad:

1 pound green beans, trimmed, blanched

Zest from 1 lemon

1/2 cup toasted walnuts

1/2 cup Pointe Reyes blue cheese

For Dressing:

1 large shallot, minced

Juice of 1 lemon

1/2 teaspoon salt

1/2 teaspoon freshly ground pepper

1/2 teaspoon sugar

1/2 cup olive oil

Place all salad ingredients in a large bowl.

Whisk dressing ingredients together in a small bowl until emulsified. Pour dressing over salad and toss well to combine.
